1. Cheesecakeadilla

Ingredients:

  • 1/2 block cream cheese, softened
  • 1 tablespoon powdered sugar
  • 1/4 tablespoon pure vanilla extract
  • 2 flour tortillas
  • 1-2 tablespoon butter
  • 2 teaspoon cinnamon sugar
  • 1/4 cup sliced strawberries
  • Melted chocolate, for drizzling

Directions:

  1. In a bowl, combine cream cheese, powdered sugar, and vanilla and stir until blended.
  2. Spread cream cheese mixture on one tortilla and sandwich with remaining tortilla.
  3. In a large skillet, melt 1 tablespoon butter under medium heat. Add quesadilla and cook until golden on one side for about 3 minutes. Flip and cook until second side is golden. Add second tablespoon of butter if skillet is dry.
  4. Sprinkle with cinnamon sugar, top with strawberries, and drizzle with melted chocolate.

 

2. Matzoh Icebox Cake

Ingredients:

For the whipped cream:

  • 2 cups cold heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon

For the chocolate ganache:

  • 3 cups chocolate chips
  • 1 1/2 cup heavy cream

For the cake assembly:

  • 8 large Matzoh crackers

Chocolate shavings, for garnish

Directions:

  1. Make whipped cream: In a large bowl, mix heavy cream, powdered sugar, vanilla and cinnamon. Beat until soft peaks form.
  2. Make ganache: Place chocolate chips in a large bowl. In a small saucepan, bring heavy cream to simmer, then immediately pour hot cream over the chocolate chips. Set aside for 10 minutes, then whisk until the mixture is smooth and the chocolate chips have melted.
  3. To assemble cake, place a cooling rack inside of a sheet pan and place one matzo cracker on the rack. Spread ganache on top of cracker, then spread whipped cream over the ganache. Top with another matzo cracker and repeat the process until you’ve used up all of your whipped cream.
  4. Pour extra ganache over the ice box cake, covering all the sides. Top with chocolate shavings. Transfer cake to a serving plate and refrigerate until the cracker layers have softened to become cake-like, about 4 hours.

 

3. Strawberry Shortcake Lasagna

Ingredients:

  • 4 cups heavy cream
  • 1/2 cup powdered sugar, plus more for dusting
  • 2 teaspoons pure vanilla extract
  • 1 1/2 boxes wafers
  • 1 pound of strawberries, thinly sliced

Directions:

  1. In a large bowl, beat heavy cream, powdered sugar and vanilla until medium peaks form.
  2. Assemble lasagna: In a pan, spread a thin layer of whipped cream. Top with a layer of wafers and spread a thick layer of whipped cream on top. Top with a layer of strawberries. Repeat two times, ending with strawberries. Sprinkle with crushed wafers.
  3. Refrigerate until wafers are totally soft.
  4. Sprinkle with more powdered sugar, then slice and serve.
