Creamy Garlic Scallop Spaghetti and Bacon

Ingredients

¾ pound dry spaghetti

4 slices crisp cooked bacon chopped

1 pound medium sized scallops

Salt and pepper to season

3 tablespoons olive oil

6 cloves minced garlic

½ cup white wine

1 cup low sodium seafood stock or chicken stock

1½ cups whipping cream

2 large tomatoes center pulp removed and diced small.

½ cup grated Parmesan cheese

Instructions

  1. Cook the dry spaghetti to al dente in salted water and drain.
  2. Crisp cook the bacon in a large sauté pan and roughly chop it. Set aside.
  3. Season the scallops with salt and pepper and pan sear them in the bacon fat for only about 1½ to 2 minutes per side and set aside with the bacon.
  4. Drain the bacon fat from the pan and add the olive oil and garlic; cook for only a minute to slightly soften the garlic.
  5. Add the white wine and seafood stock and simmer quickly for a few minutes until the liquid has reduced by about â…“. Add the cream and simmer for an additional 2 minutes.
  6. Season with salt and pepper if needed, then add the bacon, tomatoes and the scallops to the sauce. Simmer for only a minute or two to warm the scallops through before adding the cooked pasta and Parmesan cheese.
  7. Toss together the pasta and sauce very well before serving.

Beef Tenderloin with Roasted Cauliflower-Pomegranate Salad

Ingredients

1 whole filet of beef

6 tbsp. olive oil

2 tsp. kosher salt

1 tsp. Freshly ground pepper

1 head cauliflower

5 large shallots

2 tbsp. fresh lemon juice

2 tsp. whole-grain Dijon mustard

1 package baby kale

1/2 c. pomegranate seeds

Instructions

  1. Heat oven to 475 degrees F. Place the beef on a large rimmed baking sheet. Rub with 1 tablespoon olive oil, salt, and pepper. Bake at 475 degrees F for 12 minutes.
  2. Meanwhile, toss 2 tablespoons oil with cauliflower and shallots; season with additional salt and pepper. Quickly scatter vegetables around beef in the pan and continue to bake, stirring vegetables once, 18 more minutes (for medium-rare) or until meat reached desired degree of doneness.
  3. Remove beef from pan and cover with foil; let stand 15 minutes. Whisk together remaining 3 tablespoons olive oil, lemon juice, and mustard; season with salt and pepper to taste. Stir kale into hot pan with vegetables. Drizzle with olive oil mixture and sprinkle with pomegranate seeds. Slice beef and serve with cauliflower pomegranate salad.

Cocoa-Gingerbread Brownies

Ingredients

1 3/4 c. all-purpose flour

3/4 c. sugar

3/4 c. dark brown sugar

1/4 c. cocoa powder

2 tsp. ground ginger

1 1/2 tsp. cinnamon

1 tsp. salt

1/4 tsp. ground clove

12 tbsp. unsalted butter

1/2 c. molasses

1/4 c. whole milk

1 large Egg

1 large egg yolk

1 1/2 tsp. baking soda

8 oz. semisweet chocolate

Ingredients

  1. Preheat oven to 325 degrees F.
  2. Butter and flour a 9- by 13-inch baking dish and set aside. Sift together all the dry ingredients into a large bowl.
  3. Combine the butter, molasses, milk, egg, and yolk in a medium bowl. Add the butter mixture to the flour mixture and stir to combine.
  4. In a small bowl, combine 1/4 cup boiling water with the baking soda. Add the water to the batter and stir to combine. Stir in the chocolate chunks.
  5. Pour the batter into the prepared pan and bake until a toothpick inserted into the center comes out clean -- about 40 minutes.
  6. Transfer brownies to a rack to cool. Serve warm or at room temperature.
