Beef Tapa

Ingredients

1 kilo beef, (use sirloin), sliced thinly

5 tablespoons soy sauce

3 tablespoons worcestershire sauce

3 tablespoons garlic powder, minced

2 tablespoons sugar

1/4 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons vegetable oil

Cooking Procedure

  1. In a bowl, combine soy sauce, Worcestershire, garlic, salt, pepper, and sugar and mix well. Marinate the beef in the mixture and keep it in the refrigerator for at least 3 hours.
  2. To cook, pre-heat the oil in a pan and brown the marinated beef until done.

Skinless Chicken Longganisa

Ingredients

1/2 cup brown sugar

4 tablespoons worcestershire sauce

4 teaspoons salt

2 tablespoons liquid seasoning

1 tablespoon hot sauce

1 tablespoon garlic, minced

1 teaspoon black peppercorns

1 kilo chicken, use ground chicken

200 grams pork fat

vegetable oil, for frying

 

Cooking Procedure

  1. Make the marinade: In a large bowl, mix together all ingredients.
  2. Add ground chicken and pork fat; mix thoroughly by hand. Form into thin logs and wrap each sausage in wax paper if desired.  Marinate in the refrigerator for 3 hours or overnight. Drain marinade, place sausages in a covered container, and store in the freezer until ready to cook.
  3. When ready to cook, thaw sausages. Heat about 1 tablespoon oil in a frying pan. Fry a few sausages at a time for 6 to 8 minutes or until sausages are cooked through.

Pork Tocino

Ingredients

1/2 kilo pork, (use pork tenderloin), sliced thinly

2 1/2 teaspoons salt

1/2 cup coconut sugar

1/2 tablespoon garlic, minced

1/3 cup pineapple juice

1/4 teaspoon ground star anise

black pepper, to taste

1/4 cup water

Cooking Procedure

  1. Combine pork tenderloin, salt, brown or coconut sugar, minced garlic, pineapple juice, ground star anise, and black pepper in a bowl. Marinate, covered, in the refrigerator overnight.
  2. Simmer pork and marinade in a pan with about water. When pan is almost dry and marinade is syrupy, stir frequently to allow meat to caramelize evenly. (You can add 1 to 2 tablespoons vegetable or coconut oil since meat is lean.) Once meat has caramelized, remove from heat.
