There are many times in a year where a good weight loss program could be of great use: pre-Christmas (so it doesn’t pile on too much after the holidays), post-Christmas (because a new year is coming and the words “get fit” take its place on the yearly resolutions list), and most likely weeks before summer (to flaunt it more confidently, of course).

 

Zucchinis, also known as courgettes, are fruits which originated in Italy. It has extremely low calorie content and it increases our metabolism, helping us to burn fat faster. It can be eaten raw, but to make it more fun, here are some recipes from allrecipes.com:

 

Zucchini Patties

Ingredients:

  • 2 cups grated zucchini
  • 2 beaten eggs
  • ¼ cup chopped onions
  • ½ cup all-purpose flour
  • ½ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • Salt
  • 2 tablespoons vegetable oil

 

Directions:

  1. Combine the zucchini, eggs, onion, flour, Parmesan cheese, mozzarella cheese, and salt in a bowl. Stir well and make sure the ingredients are distributed evenly.
  2. In a skillet, heat a small amount of oil over medium-high heat. Drop the zucchini mixture by heaping tablespoonfuls, and cook until each side is golden.

 

Zucchini Spaghetti

Ingredients:

  • 1 pound ground beef
  • 1 teaspoon ground black pepper
  • 1 (15 ounce) can tomato sauce
  • 1 (14.5 ounce) can whole peeled tomatoes
  • 1 tablespoon salt
  • 1 teaspoon dried basil
  • ½ teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon ground thyme
  • ¼ teaspoon red pepper flakes
  • 1 (6 ounce) can tomato paste
  • 3 zucchinis, cut into long strands

 

 

Directions:

  1. In a large skillet, cook and stir beef and black pepper until browned and crumbly. Drain and discard grease.
  2. Mix tomato sauce, tomatoes, salt, basil, oregano, garlic powder, onion powder, thyme, and red pepper flakes into ground beef. Cook and stir until sauce is warm. Stir tomato paste into sauce and mix well.
  3. Mix zucchini strips into sauce and simmer over medium-low heat until zucchini is tender.

 

 

Stuffed Zucchini

Ingredients:

  • 3 zucchinis
  • 1 pound pork sausage
  • 1 cup dry bread crumbs
  • 1 clove garlic, minced
  • 1 (32 ounce) jar spaghetti sauce
  • ½ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese

 

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Cut stems from zucchini and slice lengthwise. Scoop out seeds and put it in a bowl. Mix seeds with sausage, garlic, bread crumbs, and parmesan cheese. Stuff the squash with sausage mixture and place it in a baking pan. Pour sauce over squash and cover pan with foil.

Bake in preheated oven for 45 minutes, or until sausage is cooked. Remove foil and cover with mozzarella cheese. Cook until cheese is melted
